There are definitely more evolutions not yet listed in the guide. Four were added in the latest 1.52fix, and some might have slipped by unnoticed earlier, especially from the times we relied only on Google-translated changelogs.

I did some code skimming today and found a few things that don't match the wiki. Other than these, I think the page has all the evolutions:
-Mandrakes can evolve into swordmandrakes with another heart, which are currently the only evolution that gains mana (they get +20).
-Harpies have two evolutions, turning into "flare chicks" with another heart, then "phoenixians" with a magic heart.
-Wild minotaur kings can apparently be given a king heart to evolve into minotaur kings? I can get why the wiki doesn't mention this even if it works.
-Ungaga has a new sprite now, sitting directly above user graphic 30 on character.bmp. Aldebaran also uses this sprite.
-Lizard men can evolve using another heart into something?? It gets perception and speed so it's probably some sort of ranger.
-Lizard men and lizard mages can evolve into "Lizard majesty" using a king heart.
-Puppies, pumpkins, greater pumpkins, and halloween nightmares can all turn into necro chimeras using king hearts. They don't seem to lose invisibility or potions.
-The mushroom evolutions on the page are listed as gender-neutral, but I think they're female-only.
-Wild wood/stone golems can evolve just like the crafted small ones. Steel golems also get these evolutions.
-Cupids of love can turn into lord cupids using king hearts.
-Gokiburi get the same evolution as murder roaches.
-Stray cats get the same evolutions as cats and silver cats.
-Vanilla hounds get the same evolutions as dogs (no elemental hounds though).
-Apprentice angels can evolve into angel astray using a magic heart.
These could all obviously use some testing in wizard mode. Some evolutions also featured a variable change that I couldn't figure out: It's not a stat, it's not a resistance, and it's not a bit flag, so I think it's either a skill change or an AI change. The list of evolutions I found is [here] in case anyone wants to look for candidates I missed. Skeleton warriors are double-listed on there because the chess pieces were parsed weirdly, and I didn't want to have to work around the edge case.
My guess is that some values reference height and weight (var_57(19, var_243) is height, and var_57(20, var_243) is weight). Skill change would be applied as skillmod, and AI is stored somewhere else. I may be wrong though.
Also, you forgot yerles machine infantry, which has same path as yerles elite machine infantry.
AI actions are based on unit ID and another variable regarding evolve status. Some of those are modified in individual evolutions I think (which is used to differentiate between branches), but most are just modified using a single line at the end.
If you're talking about the var_57(7) changes, I'm relatively sure it has to do with the sprite, with modifiers like 5 * 1000 being the tint. Someone could probably test is pretty easily with Elosnack to be 100% certain though.
